Ingredients
- 1 onion, finely chopped
- 1 tbsp. expeller-pressed coconut oil
- 10 oz. grass-fed ground beef
- 1 28 oz. can of diced tomatoes (or 2 ½ cups of diced
- fresh tomatoes and 1 cup of water)
- 2 large carrots, sliced
- 4 cups chicken stock
- 1 tbsp. of each: dried thyme, dried oregano, dried
- basil
- Sea salt and pepper
Instructions
1. Heat a large pan over low to medium heat. Add the onion and oil and cook for 2 minutes.
2. Add the ground beef. Cook for 5 more minutes.
3. Add the tomatoes, carrots, stock and spices. Bring to a boil and simmer until the carrots are tender.
4. Season with salt and pepper.
